Recipe: Spicy Chicken Stir-Fry with Peanuts

I got an email last week with "meals for one" and thought this looked good. I have made it twice since. HERE's the recipe.

Some adjustments I've made to the recipe: I had sugar snap peas, not snow peas, so I used those. Since I am trying to eat more veggies, I added yellow and orange pepper. I used a green jalapeno pepper, lots of fresh basil, and also added halved cherry tomatoes. The second time I also added fresh cilantro at the end. It was good, but I actually think I liked it better with just the basil, so there weren't too many competing. Next time I will try to throw in some sliced green onion. Here's the best part - at the end, when I squeezed the lime juice onto it, I added 2 tsp of PB2* instead of the chopped peanuts - YUM! Just enough of the peanut flavor without all the calories/fat! I served it with a little bit of leftover rice that I had in the fridge. It was delicious. If you like Thai food, you should totally try this.
